Dad's Nuclear Waste
2 T olive oil
1 1/2 lbs of coarsely ground or chopped meat (beef, port, chicken, turkey - most anything but
fish)
1 t hot chili oil
2 large onions chopped
6 cloves garlic minced
1/3 C chili powder
2 t cumin powder
1 t dried oregano
1 t crushed red pepper
t cayenne
1 28oz can crushed tomatoes
2-3 cans beans (if desired - could be pintos, black beans, most any kind)
2 jalapenos or 1 habanero (scotch bonnet) peppers minced including ribs and seeds (the hot part)
1 jalapeno sliced for garnish
C fresh chopped cilantro (parsley will do if you can't find cilantro)
In a large pot, heat the oils. Add the meat, onions, garlic, and spices except for peppers. Cook til
meat is browned and onions are softened. Add everything else except the sliced jalapeno and
cilantro. Cook for 3-4 hours over low heat stirring occasionally. If the chili becomes too thick,
add some water. If it is too thin, add some masa. Be careful adjusting thickness too soon or you
will spend hours adjusting it. During the last hour, add the sliced jalapeno and the cilantro and
adjust the thickness if you need or want to do so. Can be served with additional chopped onions
and grated cheese if desired.
NOTE: Wear rubber gloves when mincing peppers and be very careful not to touch your eyes til
you have thoroughly washed your hands.
